Quinoa Bowl Mason Jar Meal Prep

If you need meals during the day that are quick and nutritious without re-heating, this meal prep idea is for you! I’m not usually big on meal prepping- I usually eat leftovers or cook at home, but I am currently moving places so I need the extra prep! (keep reading for a link for the cheap mason jars- less than $1 per jar.)

The star of this meal prep was definitely the quinoa bowls which are light, nutrient-dense and pretty tasty cold- perfect for lunch!

This recipe I will make enough for six meals which is perfect for Riq and I for the next couple days. I also boiled & peeled eggs, washed and chopped strawberries & mangoes and made my favorite cold pasta.

What’s that saying again? “If you fail to plan that you’re planning to fail?” Or something like that. Anyways, I definitely “failed” last week and ended up eating 90% fast-food. I was irritable, hangry and exhausted. So on Sunday, I made sure to prep some nutritious meals so I can keep my productivity and overall quality of life high! 😂

The key to making these meals last is to leave the dressing until you are ready to eat it. I like to use my “elemental dressing” which is the art-form of combining salt, olive oil and lemon to your taste and preference. Also if you don’t already have mason jars grab them from HEB here, I got 12 for $10!!! Versus these ones on Amazon which are SEVEN times the price??
