Southwest Salad Bowl

The skeleton frame of my salad bowls are: Greens + Grains + Protein + Simple dressing. Then I usually improvise with toppings for added flavor, texture, and nutrients.
This recipe is super fresh and nutrient dense! Perfect for lunch or dinner. The key to this meal is having some grilled chicken and cooked quinoa prepared in the fridge so when you’re hungry and stripped for time, you’ll be eating in no time.
Important tip: Make sure to marinate the greens with salad dressing at set aside for a few minutes! This helps coat each leaf with healthy fats and makes digestion much easier and the greens more enjoyable!
