Summer Spinach Salad
This is great as a nutrient boosting snack or side salad. I got a lot of comments saying there's no way that this was appetizing or kept me full at all.
Well, it was SUPER delicious, but not the most filling meal. That's not the point here. I'm not using this as a replacement meal, I'm using this as a way to boost my diet with some dietary vitamins and minerals.
Yes, food should also be delicious, there's always a balance. Food should be for pleasure- absolutely, but every here and there, I eat food as medicine.
Spinach contains a high amount of Potassium, and Vitamin A, but also sodium, so people who are prone to kidney stones should not consume it in very high amounts. Strawberries contain a high amount of Vitamin C, not to mention fiber and antioxidants.
